Overview
The term "kosher" means "appropriate" and refers to food prepared in accordance with kosher laws. To obtain kosher certification, a kosher certification body must prove that all ingredients in a product and its preparation process meet kosher standards. To this end, kosher certification bodies examine the source of all raw materials, including any processing aids that come into contact with food, verify the kosher status of equipment used in the manufacturing process, and establish a system to monitor and maintain the integrity of raw materials and equipment.
Kosher Basics
Food can be broadly divided into three categories:
Harmless: Some foods are always accepted as kosher. Typically, these foods include fresh fruits, vegetables and grains, water, sugar and salt, all of which are minimized.
Kosher in compliance under supervision: Other foods such as oils, glycerin, and corn syrup may also be kosher if the ingredients and processes used meet the definition of kosher and are under the supervision of a reliable kosher authority.
Never to meet kosher standards: Some foods may never meet kosher standards. For example, shellfish and pork are both prohibited by kosher laws.
In addition, all kosher foods can be divided into three categories:
Meat: Only the meat of scavengers and their by-products are permitted for consumption, and must be prepared by specially trained...“Shochet” (ritual butcher) slaughter. Clean food includes beef, lamb, chicken, and turkey.
Dairy products: Milk, cheese, and other dairy products must come from animals that meet kosher standards to be compliant with kosher food regulations. Kosher food prohibits the mixing of meat and dairy, therefore foods like cheeseburgers and chicken with Parmesan are unacceptable. Foods containing neither meat nor dairy are considered..."Neutral" (pareve). The certification body will determine whether the product contains dairy ingredients or was produced using dairy equipment to prevent consumers from mixing meat and dairy products.
Passover
Passover is a period of timeThe eight-day Passover festival, occurring in the spring, commemorates the Jewish people's exodus from ancient Egypt and involves a unique set of additional kosher laws. During Passover, those observing kosher food avoid fermented foods such as bread and crackers. While kosher food is observed at other times, certain grains and their derivatives are forbidden during Passover. Passover preparation requires special supervision.
