Is fat (oil) halal?

Lipids are a general term for oils, fats, and lipids. Usually, when we say fat, it also includes oils. The oily substances in food are mainly oils and fats. Generally, those that are liquid at room temperature are called oils, and those that are solid at room temperature are called fats. Fats are composed of three elements: C, H, and O. Fats are triacylglycerides composed of glycerol and fatty acids. The glycerol molecules are relatively simple, while the types and lengths of fatty acids are different. Fatty acids are divided into three categories: saturated fatty acids, monounsaturated fatty acids, and polyunsaturated fatty acids. Fats are soluble in most organic solvents, but not in water. It is a glyceride C3H5(OOCR) 3 of one or more fatty acids.
One of the most common ingredients used in food processing plants is oil. Oil is defined as any substance that is oily and insoluble in water. Oils come in many different types and from a variety of sources, including animal, vegetable, and mineral sources. Edible oils are typically derived from either animal or vegetable sources. A question we often receive is: Is vegetable oil produced by oil processing plants necessarily halal?
Currently, the most common Halal oils and fats in the international market are of plant origin, so this chapter is limited to explaining plant-based oils and fats.
Pure vegetable oils that have not undergone extensive processing, such as virgin soybean oil, peanut oil, sunflower oil, palm oil, etc., are inherently halal (provided that their processing equipment and transportation methods do not cause cross contamination and do not affect their halal properties).
Oil packaging must clearly indicate its actual origin, i.e., whether it is plant-based or animal-based. This allows consumers to easily identify non-halal oils. However, it is crucial to note that the product is certified by a reliable halal certification agency. This is because vegetable shortening manufacturers often use the same equipment used to process animal fats. While pure vegetable shortening may meet USDA guidelines for purity, the vegetable oil may be non-halal in terms of halal status because it may have been processed on non-halal equipment.
The primary challenge for vegetable oils to maintain their halal status lies in crude oil refining, deodorization, and processing in refineries. Due to trade demands, most refineries process butter and lard in addition to vegetable oils. Butter and lard are not permitted to share processing and transportation pipelines with vegetable oils. If a vegetable oil processing plant has previously processed butter or lard, thorough cleaning is crucial. Cleaning must be performed under heated conditions, using hot water rather than flushing the oil. To ensure absolute cleanliness, the cleaning process must be personally performed by an inspector appointed by the halal certification body. Since water and oil cannot mix, yet hot water cleaning is necessary, a period of thorough drying is typically required after hot water cleaning.
